Ever so slightly pale pink in colour. Strawberries and cream, a hint of brioche and red apple skin on the clean and bright nose. A light to medium bodied bubble, very dry but intense palate of more apple skin, cranberry and toast.
Wine Making: Methode Champenoise (Traditional Method) 6 months on lees. Zero Dosage. Unfined and Unfiltered.
Vineyard: Planted in 2000 up and behind Nichol this Pinot Noir vineyard is wonderful for the production of traditional sparkling wine. In addition, we finally have something to do with our Pinot Meunier which usually gets eaten by the birds every year as it is the first thing to ripen before we can get our nets out.
